iSCSI or Fibre?

We're thinking of utilising iSCSI at a clients place
to improve IO times from the server to the user.
The psd files they open and save can be up to 20GB in size and take up to half an hour to open, this is obviously not very cost effective.
While researching iSCSI I found this video, its a bit cheesy but it explains the technology quite well.
